Bev's Bagels plans to open at 115 East Liberty Street this summer, bringing hand-rolled, kettle-boiled, New York-style bagels to a city that has gone without a dedicated bagel shop for far too long.
The space sits between Spencer and RoosRoast on a block of East Liberty that is quietly becoming one of Ann Arbor's most interesting food corridors. It's a good address. The foot traffic is already there, and the neighbors are serious about what they do.
Details on the full menu are still emerging, but the core promise is straightforward: proper bagels made the way they're supposed to be made. Hand-rolled. Kettle-boiled. Baked on boards. The kind of process that most bakeries skip because it's slower and harder than sheeting dough and steaming it in a rack oven. The difference shows up in the crust. A real bagel has a thin, crackly exterior that gives way to a dense, chewy interior. That texture doesn't come from shortcuts.
Ann Arbor has plenty of places that sell bagels. It has not, until now, had a shop built entirely around making them well. The difference is bigger than it sounds.
